Note to self: 20 pounds of peaches is too much to handle. I have been washing, pitting and slicing peaches for two evenings now and have just finished. I have crammed my freezer full of baking trays loaded with peach slices to freeze and then bag. By this evening, the ones still in the bucket were both bruised and ant-ridden. Ick. I lovingly washed and removed all the ants (the peaches were the object of the love… not the ants). Then sliced and cut out all the bruised bits. I have 6 cups of fresh peach slices in the fridge earmarked for more baked goods, and tons in the freezer for future use. After fighting the good fight, saving the peaches and killing hoards of ants, it’s beddy-time. *sigh*
